We invite you to get inspired by the festive spring mood and learn the technologies, secrets and trends of Easter bakery at our theoretical and practical master class “Secrets of Multifaceted Easter Baking” together with renowned experts in baking – baker-technologist Vita Kozar and baker-artist Stas Vagner.
PROGRAMME:
You will learn the technologies of cooking stunning Easter bakery in the Italian, French and Ukrainian Easter traditions:
Colomba Pascuale (“Easter Dove” in English) with a sourdough starter Levito-Madre;
Panettone Classico (“Classic Panettone” in English) with candied fruits and chocolate and with a sourdough starter Levito-Madre;
Stellatone (“Star” in English) with candied fruits and chocolate and with a sourdough starter;
Kuglof with candied fruits and almonds;
Classic Paska (“Easter bread” in English) with fermented semi-finished products (two-phase cold method);
Easter Paska (“Easter bread” in English) with cherries and dark chocolate;
Easter Paska (“Easter bread” in English) with apricot, white chocolate and pistachios;
French Brioche with chocolate and orange;
Glassa for Panettone and all tricks of the recipe for cooking divine orange candied fruits.
You will know how to use non-standard raw materials in pastry and baking. You will find out about common sense and finding a balance as the best way to generate new appetizing solutions that will bring great culinary pleasure to your customers. You will understand the flavours, their harmony and connectivity. You will hear about trend ideas in pastry and baking:
- what is the double taste and how to create it;
- what are the benefits of sourdough in Easter bakery. You will learn about the versatility, consistency and taste of Cold Fermentation and its meaning. You will study the Foodpairing Tree for bread– a visualization of the best harmony of ingredients in the dough and finished product.
